Birthday Celebration on Monday December 26th

Come join me on Monday December 26th to celebrate my Birthday & 12Twentsix events 1st Birthday at Pinz in Sherman Oaks. I will be there at 7PM and yes I will be passing out FREE Cupcakes. The Chew Micheal Symon's Hanky Pankies

I love the show The Chew. I really never want to try stuff when I see them on TV but I'm loving The Chew so today Micheal Symon made these things called Hanky Pankies and I just had to try it because it looked tasty and EASY..... I love easy dishes. It was an appetizer dish but, I made the appetizer & had leftovers of the mixture so I made a pasta dish out of it by adding 1/2 cup of buttermilk & 1/2 cup of milk & pasta. Both dishes are FABULOUS.....
Here are the ingredients and how to make the dish (Dishes)
1 Pound of Spicy Sausage
2 Tablespoons Flour
1/2 Cup of Parmesan Cheese
1/2 Chopped Parsley
2 Tablespoons Reserved Fat from Pan
2 Cups Milk (I used 1 cup milk & 1 cup Buttermilk)
Salt & Pepper
Baguette Slices


1. Start browning the sausage.
2. While the sausage is browning. Cup the baguette into 1in slices and lay the on your pan. (on the show Michael grilled the baguette but I didn't)
3. After your meat is browned add your flour and mix into your grease to build a little bit of a roux.
4. Add the Milk and stir (I added one cup buttermilk & one cup Milk)
5. Now add the Parmesan Cheese and stir well
6. Now add the Parsley & stir well
7. Stir and let it simmer for about 2 min. make sure you keep stirring
8. Scoop a little bit on your baguette slices (I got about a tablespoon of the mixture into each baguette) Then put in the oven on Broil for about 2 minutes.
9. Remove from oven & serve
I had a lot of the mixture left over and instead of it going to waste I added about 1/2 cup of buttermilk & 1/2 Cup of milk into the leftover mixture so that it became a sauce.

 Then I added some boiled pasta & stirred it all together and served. 2 meals out of one recipe. It was really good. I hope you guys try it.

The Chew Daphne Oz's Pound Cake

I love trying new cake recipes so when I saw Daphne Oz making this Pound Cake with coconut & pecans I had to try and share my experience with you all.
The recipe called for Pecans but I only had Walnuts so I used that. The Recipe also said 2 cups of sugar but I only added 1 1/2 cups of sugar to prevent it from being to sweet. I only use half the amount of sugar for the glaze because I did not want the cake to be very sweet. On the show Daphne poured all the glaze on the cake, what I did was poured about half of the glaze on top of the cake before I flipped it onto my serving dish. I put the rest of the glaze in a gravy boat & my guests can pour as much or as little of the glaze over their slice of cake.Overall this was a really good cake. Daphne on the show mentioned it tasted like a pancake and it really did taste somewhat like a pancake.It was also really easy to make.
Cake Ingredients:
2 Cups Sugar (I used 1 1/2 Cups Sugar)
3 Cups Flour
1/2 Teaspoon Salt
1 Cup Shredded Coconut
4 Eggs
1/2 Teaspoon Baking Powder
1 Cup Butter
1 Cup Buttermilk
1 Cup Pecans (I used Walnuts not pecans)

Glaze:
1 Cup Sugar (I only used 1/2 cup)
1 Cup Water
2 Tablespoons Butter
Powder Sugar for Dusting

Cake:
1. Preheat oven to 350. Mix together Butter, Sugar, & Eggs
2. Cream them together
3. In a separate bowl combine dry ingredients: Flour, Salt, Baking Powder
4. Add the dry Ingredient Mix & Buttermilk into your sugar, butter & egg mixture. I added half the dry ingredients & half a cup of buttermilk mixed well then added the rest of the dry ingredient mix & another half of buttermilk & mixed until all ingredients are well combined.  
5. Dump coconut & walnuts into the batter and with a spatula fold in the walnuts & coconut   
6. Grease your pan generously (the more you spray the better it will come out when you flip the cake)
7. Pour the batter into the pan and spread so the batter so it covers the entire pan
8. This is what it should look like right out the oven. (It took about an hour, just make sure you do the toothpick check before you remove from the oven)
9. Right out the oven pour half of your glaze mixture over the cake (If you want it to really sink in I would poke holes before pouring glaze) Then flip it over onto your serving dish.
10. I poured some glaze in the center of my cake and dusted powder sugar around it.

11. Cut the cake & let your guest pour as much or as little onto their slice of cake.

Glaze:
1. Put all the ingredients into a sauce pan

2. On a low heat let your butter completely melt & boil then remove from heat

My Chirstmas Wish List

 
I'm a complete sucker for Christmas time. I love everything about Christmas The way the neighborhoods light up at night, the smell of the Christmas tree, & the way people just become a little bit nicer for the Holidays. I know some of you out there don't really like the Holiday Season for whatever reason: maybe because you don't have family to spend with, or your finances are so tight right now you don't know if you can do the simply things like getting a Christmas tree or you just plan old HATE the holiday spirit. This year I wanted to take the time before we get wrapped up into the Hustle & Bustle of the season to make my wish list. 
1. I wish that I could feed every child in the world with a meal every night. 
2. I wish that I could give every single mother out there an opportunity to give her children everything that they want this Christmas. 
3. I wish that I could heal the people that are suffering from an incurable illness.
4. I wish that I could give everyone that is out of a job & looking for work a job so they can provide for their families.
5. I wish I could help everyone suffering from depression and let them know it's going to be OK.
6. I wish I could give every parent that has lost a child one more day for them to hold them & tell them how much they love them, just to make their lives bearable without their baby.
7. I wish I could make every parent proud of their children.
8. I wish that one day we can live in a world with no fear of terror attacks and all of our troops are home with us.
9. I wish that everyone will take a moment this holiday to embrace what they have & not what they don't have.
10. Finally my biggest wish this year is for everyone that is reading this will do something to help someone this holiday season. Whether it's a meal to homeless person or helping the elderly across the street just one act of kindness. (other then putting a toy in the box for toys for tots) 
Making people happy is what makes my heart smile so I will pray everyday as we go into this Holiday season & the New Year that God gives me the strength & power to help people in need.
